Oat & Banana Scotch Pancakes

This is a very easy recipe that doesn’t need any added sugar in the batter as lemon juice provides extra flavour. This small size is also called a Drop Scone. You can also make one big, thick pancake and slice it. Similar recipes online often say to blitz into a smooth batter but we don’t think that’s required.

Ingredients

1 ripe banana
50gm rolled porridge oats
1 egg
1 tablespoon lemon juice
1 teaspoon baking powder
1 teaspoon cinnamon / ginger (optional)
handful of dried cranberries/raisins (optional)

butter for frying

Method

  1. Mash the banana and lemon juice, crack in the egg and stir well.
  2. Stir in oats and baking powder.
  3. Heat butter in a frying pan on medium heat and spoon the mixture in.
  4. Fry until bottom side is golden (you might see bubbles appear on the top surface).
  5. Turn and cook until other side is golden.
  6. If you want them more lemon-y squeeze lemon juice over pancakes before serving.
