This is a very easy recipe that doesn’t need any added sugar in the batter as lemon juice provides extra flavour. This small size is also called a Drop Scone. You can also make one big, thick pancake and slice it. Similar recipes online often say to blitz into a smooth batter but we don’t think that’s required.
Ingredients
1 ripe banana
50gm rolled porridge oats
1 egg
1 tablespoon lemon juice
1 teaspoon baking powder
1 teaspoon cinnamon / ginger (optional)
handful of dried cranberries/raisins (optional)
butter for frying
Method
- Mash the banana and lemon juice, crack in the egg and stir well.
- Stir in oats and baking powder.
- Heat butter in a frying pan on medium heat and spoon the mixture in.
- Fry until bottom side is golden (you might see bubbles appear on the top surface).
- Turn and cook until other side is golden.
- If you want them more lemon-y squeeze lemon juice over pancakes before serving.
