Sausage Hotpot aka Cowboy Stew

This easy, filling recipe can include diced potato or pasta. The potato version can also be served with dumplings. You can easily make it veggie by using veggie sausages.

Ingredients (serves 4)

  • 1 onion (and 2 cloves of garlic – optional)
  • 2 carrots, grated
  • 1 pack of sausages
  • 1 tin of baked beans
  • 1 tin of other beans (butter beans, kidney beans etc)
  • 1 tin of chopped tomatoes / jar of pasta tomato sauce / tube of tomato puree
  • 200gms cooked diced potato or 200gms pasta (like penne or fusilli)
  • Big handful of frozen/fresh spinach, chopped
  • Worcestershire Sauce (good glug)
  • Seasoning (salt, pepper, smoked paprika)

Dumplings (optional):
100gm plain flour
50gm vegetable suet
1 tsp baking soda
1 pinch of salt & 1 tspn dried herbs (optional)

Steps

1. Chop up sausages into 1 – 2 cm chunks (scissors work well). Heat oil in a saucepan and brown your sausage chunks.

2. Chop onion and add to the sausages. Stir and cook until onion is starting to golden.

3. While sausage and onion is cooking, make your dumpling dough (see below).

4. Add minced garlic, grated carrot, spinach, tinned beans and tomatoes. Stir well and bring to a simmer.

5. Add your diced potato or pasta.

6. If you’re making dumplings, place the dumplings in the top of the stew now so they’re half in the liquid (if you need more liquid, add water & tomato puree). Cover with lid and cook for 15 – 20 mins until dumplings have risen.

7. Taste the stew and add seasoning if required. Serve with salad or green veg.

How to make dumplings

1. Sift the flour, baking powder and salt into a bowl. Add suet and enough water to form a thick dough.

2. With floured hands, roll spoonfuls of the dough into small balls.
