What’s in Your Fridge Salad

We had a red cabbage and a white cabbage that needed using up and this was the tasty result. Use this as an inspiration to use up what is in your fridge. If you add mayonnaise it becomes more of a coleslaw.

Ingredients

half a red cabbage, grated
half a white cabbage, grated
handful of fresh herbs, chopped
handful of sprouted mung beans
1 peach, chopped
2 spring onions, sliced
seeds
dressing/oil & lemon juice

Steps

Combine your ingredients in a bowl.

Add dressing of choice.
