Banana Cake or Muffins

This is a great way to use up ripe bananas. The trick is not to mash them too much otherwise they become liquid – you want to keep the texture of the banana. You can also add chopped nuts or dark chocolate pieces.

Ingredients

  • 250 gms self-raising flour
  • 250 gms butter/non-dairy margarine
  • 70 gms sugar
  • 3 large ripe bananas
  • 2 tspns cinnamon
  • 1 tspn mixed spice (optional)
  • 100 gm chopped dark chocolate or nuts (optional)

Method

  1. Heat the oven/air fryer to 170°.
  2. If you’re using a loaf tin, line it with greaseproof paper.
  3. Cream the butter/marg and sugar together till fluffy.
  4. Slice the bananas into a bowl and mash each slice 1 or 2 times with a fork. Keep it lumpy otherwise it turns into liquid.
  5. Add banana mash to the butter/sugar mix. Stir well.
  6. Then fold in the flour and spices, keeping the air in.
  7. Spoon mixture into muffin cases or the loaf tin.
  8. Cook until golden on the top and a knife inserted into the middle comes out clean (approx 8 mins for muffins and 20 mins for cake).
