Cranberry Oatmeal Slices

This is a tasty way to use up cranberry sauce but if you haven’t got any you can use fruit puree eg this apricot oat slice recipe. For extra protein you can substitute some of the oats with finely chopped seeds or nuts.

This recipe fills a 8″ x 12″ (20cm x 30cm) baking tray which makes about 20 slices.

Ingredients

300gm Self-Raising Flour (you can also use gram flour for extra protein with an second teaspoon of baking powder)
200gm porridge oats
150gm soft brown sugar
225gm butter
1 teaspoon baking powder
2 jars cranberry sauce (500g)

Steps

  1. Melt butter and stir in all ingredients except cranberries.
  2. Press 3/4 of mix into lined tin about 12” by 8”. Spread over cranberry sauce/fruit puree and cover with remaining mixture.
  3. Bake for about 25 minutes at 180 C or 160C fan oven.
  4. Cool in tin and then slice.
