Dipping Sauce for your Spring Rolls

While your spring rolls are in the oven, you have time to make the dipping sauce.

Ingredients

  • 1 red chilli, finely chopped (or chilli flakes or dash of tabasco sauce)
  • 25ml water
  • 1 pinch of salt
  • 85ml white wine vinegar (other white vinegars would do)
  • 175g caster sugar
  • 12g fish sauce (standard or vegetarian)
  • 1/2 garlic clove (or garlic paste)
  • 1 tsp fresh ginger, finely chopped (or ginger paste)
  • 1 pinch of cornflour

Method

1 Mix the water and cornflour together. Place all the remaining ingredients in a saucepan and bring to the boil.

2 Once boiling, whisk in the water and cornflour solution and boil for another 1-2 minutes, then remove from the heat and leave to cool.

3 Serve in small bowls as a dip alongside your Spring Rolls
