This recipe can be done in an air fryer or in a frying pan on the hob and finishing under the grill (see below). You can add cubes of corn beef, cooked ham, chorizo etc
Ingredients
10 eggs
4 Spring onions (or one onion, finely chopped)
4 – 6 garlic cloves, finely chopped
Seasoning – salt and pepper
3-4 medium potatoes, pre-cooked and cubed (no need to peel)
Grated cheddar cheese (Tesco’ Salad Cheese’ a tasty option)
Tin corned beef (best chilled, easier to cut into cubes) – optional
Oil
Veg options: peppers; spinach; broccoli; sliced tomatoes (baby plum); mushrooms; tinned mixed vegetables; frozen peas; left-over vegetables Seasoning options: dried mixed herbs; chilli flakes; garam masala; chopped fresh herbs.
Method
Finely chop spring onion/onion and garlic cloves and place in air fryer (either a silicone liner or oiled tin). Add the cubed pre-cooked potatoes and cubed corned beef (using remainder to make a sandwich or wrap).
Break eggs into a large jug. Add seasoning and beat together. Pour over the frittata ingredients. Sprinkle grated cheese over mixture (to taste).
Cook on ‘air fry’ setting at 190℃ for approximately 20 minutes, until mixture cooked and crispy.
Serve hot, with a side salad; or cold with, for example: coleslaw or chutney.
Not suitable for freezing.
Note:
The frittata can be cooked in an oiled frying pan, on the hob, sautéing the onion/garlic first, adding the potatoes, corned beef, egg mix and cheese. Needs to be cooked carefully to prevent the mix sticking. Option to finish off under the grill to brown.
