Fajitas

This recipe is incredibly versatile.
Add chicken, tofu, fish or mince.
Use whichever flavourings you prefer.
The fillings can be cooked on the hob or in an air fryer.
Add carrot and sweet corn if you wish .

Ingredients

4 x Fajitas (or tortilla) wraps (or 8 if using smaller wraps)
1 x large white onion
1 x red pepper
1 x yellow pepper
1 x green pepper
2 x cloves garlic
1 x thumb fresh ginger or lazy ginger (optional)
1 x tbs Olive oil 

Flavourings

2 x tbs of Cajun seasoning – or fajita mix of your choice
Drizzle of honey (optional)
Salt and pepper to taste 

Method

Slice the onions, peppers
Heat the oil in a pan and add the onions and peppers, cook gently for 5 minutes.
Finely chop garlic and ginger and add to the pan, cook for 2-3 minutes
Remove the vegetables from the pan and put in a covered dish
Coat the protein (Tofu, chicken, mince or fish) with the cajun spice , or whichever flavouring you prefer, and add to the pan
When cooked place the vegetables back in the pan
Warm the wraps for 30 seconds in the microwave 

Serve with hummous and/or:

Garlic and Lemon Mayonnaise

4 tbs mayonnaise
Juice of half a lemon
1 small clove garlic – minced or chopped very small.   

Assemble the wraps with your fajita mix, mayo/hummous. Serve with mixed leaves and cherry tomatoes.
