Watermelon, Feta & Black Olive Salad

Ingredients

Serves 8

  • 1 small red onion
  • 4 limes
  • 1 1/2 KG watermelon (sweet & ripe)
  • 250g feta cheese
  • 1 bunch of fresh flatleaf parsley
  • 1 bunch of fresh mint (Chopped)
  • 4 tablespoons of extra virgin olive oil
  • 100g of pitted black olives
  • black pepper

Method

1, Peal & halve the red onion and cut into finr half moons, put them in a small bowl with the lime juice to steep, this will bring out the transparent pickness in the onions. Two limes should be enough but if more juice needed then use more.

2, Remove the rind and pips from the watermelon and cut into 4cm triangles (Approx) Cut the feta into similar sized pieces. All both of these to a large bowl.

3, Tear off the springs of parsley and add them to the bowl
