Banana Cream Pudding

This is a very flexible recipe. Quantities don’t matter too much. You just want to create layers like a trifle.

Ingredients

3 bananas
1 cup crushed digestive/malted milk style biscuits
1 cup yogurt (any type)
handful of another fruit eg berries, dried mango, cooked rhubarb or gooseberries (optional)
1/2 cup double cream & 1 teaspoon vanilla (optional)

Dark chocolate (optional)

Method

  1. Mash the 2 ripest bananas and add to the yoghurt with any other fruit you’re using. Dried mango needs to be cut up small and needs time to soften in the yoghurt.
  2. Slice the third banana.
  3. Crush the biscuits.
  4. If using, add vanilla to double cream and whip till thick.
  5. In a serving bowl, layer the crushed biscuits, banana/yoghurt mixture, banana slices and whipped cream.
  6. Repeat the layers until the bowl is full.
  7. Grate chocolate over the top (optional).
