This recipe is sometimes called Cauliflower Popcorn but we think the crunchy breaded coating is more like a nugget. Either way, they taste great on their own or you can serve with a dip (eg yoghurt, mango chutney and a squeeze of lime juice). You can easily make this vegan by using water instead of egg and leaving out the cheese.
Ingredients
200gm cauliflower (approx quarter of a medium to large cauliflower)
Batter:
1 egg
2 dessertspoons flour
1 dessertspoon nutritional yeast flakes (optional)
Breadcrumbs:
40gm breadcrumbs
1 teaspoon each smoked paprika & onion granules
1 teaspoon oil
20gm hard cheese, grated (optional)
Steps
1. Cut cauliflower into small florets (1 – 2cms wide). Set the stalks aside to make cauliflower rice and the leaves to add to onion bhajis.
2.To make the batter, crack egg into a small bowl. Stir in flour and nutritional yeast until all the lumps have gone.
3. Put onion granules & smoked paprika in a bowl with 1 teaspoon oil. Stir well. Mix in the breadcrumbs and grated cheese thoroughly so they are evenly mixed with the spices.
4. Roll each floret in the batter until totally covered. Then place in the bowl of breadcrumbs. Roll until totally covered in breadcrumbs. You can use your fingers or 2 teaspoons.
5. Place nuggets on wire rack and cook in air fryer at 160° for 8 to 10 mins until golden and the cauliflower is tender inside.
6. Eat on their own or serve with a dip (eg yoghurt, sweet chilli dipping sauce & lime/lemon juice).
