This is a very flexible recipe. Penny’s favourite slaw is grated celeriac and carrot with mayonnaise and soy sauce (pictured above)!


raw veg: carrot, white cabbage, celeriac
chopped grapes/apple (optional)
sunflower seeds (optional)
chopped chives/spring onions (optional)
vinaigrette/soy sauce/lemon juice


Grate the veg into a bowl.
Add in fruit, seeds, chives/spring onions as desired.
Dress with mayonnaise/dressing/soy sauce/lemon juice as desired.
Chill in fridge.
Serve as a side dish – or put it on top of pizza (surprisingly yum!).
