Cheesy Chip Omelette

This is a tasty way to use up leftover chips. You can also make similar omelette with bread croutons instead of chips.

Ingredients

Up to 100gm leftover chips, roughly chopped
1 – 2 eggs
1 tomato, chopped (optional)
1 spring onion, chopped (optional)
approx 25gm cheddar, grated
cooking oil (if required)

Method

1. Heat frying pan over medium heat. Add chips and fry until chips are hot and crisp. If they seem dry, add a small amount of oil to the pan.

2. Crack egg(s) into a bowl and beat with 2 teaspoons of water.

3. Pour whipped eggs over the chips.

4. Sprinkle grated cheese, chopped tomato and spring onion on top.

5. As eggs start to set, use spatula to loosen the edges.

6. Fold the omelette in half in the pan and slide onto your plate.

7. Serve with salad and enjoy.
