Monday Munch

This is a very flexible recipe, similar to Cottage Pie that uses up leftover meat and veg for example after a Sunday roast. You can add extra flavour with spices like cumin or garlic. 

Ingredients

1 onion
cooked meat, finely chopped or raw mince (optional)
drained tin of beans (baked beans will work) or chickpeas
cooked veg
approx 200ml leftover gravy/soup
1 tablespoon Worcestershire Sauce
fresh or puree tomato (optional)
approx 3 medium potatoes cooked & sliced, white sauce
or mashed potato
cheese (optional)
cooking oil

Method

1. Fry butter in oil until translucent
2. Add meat/beans/chickpeas
3. Add gravy, Worcestershire sauce and veg and stir well
4. Put in a dish, top with tomato slices or a thin layer of tomato puree (optional)
5. Top with sliced cooked potatoes and cover with white sauce. Or layer with mash
6. Sprinkle grated cheese on top and bake at 180 degrees until top is golden
