Pasta with tomato sauce, veg and beans

Ingredients

1-2 tablespoons of oil

½ onion, peeled & diced or cut as you like it

1 clove garlic or ½ teaspoon garlic powder

1 tablespoon tomato puree (optional)

Salt and pepper

2 handfuls of veg of your choice cut to equal sizes (not too big)

½ can tomatoes

Handful of beans of your choice like butter beans, kidney beans

Handful of pasta

Dried herbs (optional)

Cheese

Method

1. Peel and chop garlic.

2. Wash veg & chop.

3. Warm 1 tablespoon oil in a pan.

4. Add onions and cook until they are soft and clear.

5. Add garlic and cook for another minute.

6. Add tomato puree if using, salt and pepper and mix. Add more oil if needed.

7. Add veg and cook until slightly soft.

8. Add tomatoes and simmer for 10-15 minutes on low to medium heat. Stir every 5 minutes or so (you can put a lid on).

9. While the sauce simmers, boil a kettle with enough water to cover the pasta generously.

10. Pour water into saucepan, let it boil again and add pasta, a touch of oil and pinch of salt, then simmer for about 10 minutes or until the pasta is soft.

11. Add beans to tomato sauce for the last 5 mins of cooking and mix.

12. Drain the pasta and leave.

13. Check sauce and taste for seasoning. Add herbs if using.

14. Add pasta to sauce and veg, mix and serve with grated cheese if liked.
