(Baked) Bean & Cheese Quesadilla (or Burrito)

Many people love baked beans. But for those who don’t, just leave them out and use the mashed haricot beans (with a squirt of tomato puree if you like). The beans and the wheat in the tortilla combine to make a whole protein.

This filling can also be used to fill a whole tortilla that you can roll into a burrito and then fry.

Ingredients (makes 4)

2 wholemeal tortilla cut in half
½ tin baked beans
½ tin haricot bean (without a sauce)
Chopped veg: tomatoes, peppers, spring onions, sweetcorn
Handful of grated cheese
Egg pancake (Instructions: scramble an egg in a mug. Heat butter in a frying pan. When hot, tip in egg and cook like a pancake).
Knob of butter

Method

  1. Mash the haricot beans with a fork.
  2. Add the baked beans and stir well.
  3. Heat butter in a frying pan. When hot place your half tortilla in the pan.
  4. Spread bean mixture on one half of tortilla (not too close to the edge).
  5. Top with strips of egg pancake, chopped veg and grated cheese.
  6. Fold tortilla over topping. Press down with spatula.
  7. Wait till bottom of tortilla is crisp and then carefully turn over. Cook until other side is also golden.
